Ardahan University Revives Ancient Kavılca Wheat

Ardahan University has revived the ancient Kavılca wheat!
The Higher Education Council (YÖK) announced that the flour obtained from the wheat planted on 100 acres of land on campus is transformed into various products by the gastronomy and culinary arts department. A facility has been established for the production of pasta, noodles, and bulgur from the wheat.
YÖK President Erol Özvar emphasized the role of universities in regional development, stating, "We expect our universities, which are the locomotive of regional development, to develop innovative practices in agriculture."
Prof. Dr. Mehmet Biber, the Rector of Ardahan University, stated that they have taken it upon themselves to protect the ancient Kavılca wheat. He highlighted that bringing this wheat to the region will add value both economically and socioculturally.
Kavılca wheat, with its low carbohydrate content and high protein value, is also of great importance for health. This project aims to add value to wheat suitable for regional climatic conditions.
